A delicious copycat recipe to recreate the popular Zuppa Toscana from Olive Garden, featuring turkey bacon for a healthier twist.

Ingredients

  • 6 cups broth (chicken or vegetable)
  • 1 pound turkey bacon
  • 3 cups chopped kale
  • 2 cups diced potatoes
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • Salt to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic. Sauté until translucent.
  3. Add the broth and potatoes. Bring to a boil and simmer until the potatoes are tender.
  4. Stir in the chopped kale and heavy cream. Cook until heated through.
  5. Crumble the cooked turkey bacon and add it back to the pot. Season with salt and red pepper flakes. Serve hot.

Notes

  • For a richer flavor, use regular bacon instead of turkey bacon.
  • Feel free to adjust the amount of red pepper flakes to your spice preference.
