Delicious and nutritious veggie egg muffins packed with 15g of protein each, featuring turkey bacon for added flavor.

Ingredients

  • 6 large eggs
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1/2 cup diced onion
  • 1/2 cup cooked turkey bacon, chopped
  • 1/2 cup shredded cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk the eggs and season with salt and pepper.
  3. Add the chopped ingredients – bell peppers, spinach, onion, and turkey bacon – to the egg mixture.
  4. If using, stir in the cheese.
  5. Pour the mixture evenly into the muffin tin.
  6. Bake for 20-25 minutes or until the muffins are set and golden.
  7. Let cool slightly before removing from the tin.

Notes

  • For an extra kick, add some red pepper flakes.
  • These muffins can be served warm or cold.
