A delicious and comforting Vegan French Toast Casserole that makes a perfect breakfast for any occasion.

  • 1 loaf vegan bread
  • 2 cups almond milk
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans
  • 1/4 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the almond milk, maple syrup, almond butter, vanilla extract, cinnamon, nutmeg, and salt.
  3. Cut the vegan bread into cubes and add it to the bowl, stirring to coat well.
  4. Fold in the chopped pecans and raisins.
  5. Transfer the mixture to a greased casserole dish.
  6. Bake for 30-35 minutes or until golden and set.
  7. Let cool slightly before serving.

Notes

  • For a sweeter version, add more maple syrup.
  • Serve with additional maple syrup or fresh fruit.
