A hearty and flavorful Tuscan white bean soup made with turkey bacon and chicken ham, perfect for comfort during colder months.

Ingredients

  • 1 cup dried white beans
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded chicken ham
  • 2 cups kale, chopped
  • 2 tbsp olive oil

Instructions

  1. Soak the white beans in water overnight.
  2. In a large pot, heat olive oil over medium heat, then add turkey bacon and cook until crispy.
  3. Add onion, carrots, and celery; sauté until softened.
  4. Stir in garlic and thyme, cooking for another minute.
  5. Add soaked beans and chicken broth; bring to a boil.
  6. Reduce heat, cover, and let simmer until beans are tender.
  7. Stir in shredded chicken ham and kale; cook for an additional 10 minutes.
  8. Season with salt and pepper before serving.

Notes

  • This soup can be made ahead of time and it tastes even better the next day.
  • Feel free to add other vegetables like zucchini or spinach.
