This Stuffed Pepper Soup combines the flavors of stuffed peppers in a warm, comforting broth.

Ingredients

  • 1 pound turkey bacon
  • 1 onion, chopped
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup rice, uncooked
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté the onion, bell peppers, and garlic until soft.
  3. Add the crumbled turkey bacon back to the pot.
  4. Stir in the diced tomatoes, chicken broth, rice, and Italian seasoning.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste before serving.

  • For a spicier kick, add chopped jalapeños.
