  • 1 pound chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh chives, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced

Instructions

  1. In a large pot, combine chicken thighs and chicken broth. Bring to a boil and then simmer for 25 minutes.
  2. Remove chicken, shred, and set aside. Strain broth to remove solids if desired.
  3. In a bowl, mix flour, baking powder, salt, and pepper. Add milk and herbs, and stir until combined.
  4. Return broth to heat and drop spoonfuls of dumpling mixture into simmering broth.
  5. Cover and cook for 15 minutes until dumplings are fluffy and cooked through.
  6. Add cooked chicken and vegetables to the pot. Simmer for an additional 5 minutes before serving.

Notes

  • For extra flavor, add a splash of lemon juice before serving.
  • This recipe is best enjoyed fresh but can be refrigerated for up to 3 days.
