A creamy and spicy soup that combines the flavors of jalapeño poppers and hearty chicken.

  • 1 pound chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup diced jalapeños, fresh or pickled
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
  2. Add the minced garlic and cook for an additional minute.
  3. Stir in the cooked shredded chicken and diced jalapeños, cooking for a few minutes.
  4. Add the chicken broth and bring to a simmer.
  5. Reduce heat and stir in the cream cheese until fully melted and combined.
  6. Mix in the shredded cheddar cheese and spices, stirring until smooth.
  7. Season with salt to taste.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For added heat, use more jalapeños or a dash of hot sauce.
