A delicious and easy recipe for Southwest Chicken Egg Rolls, perfect for a flavorful snack. These egg rolls are packed with savory chicken, veggies, and spices!

Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup shredded cheese
  • 10 egg roll wrappers
  • 1 egg, beaten (for sealing)

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, chili powder, cumin, garlic powder, onion powder, and shredded cheese.
  2. Lay an egg roll wrapper on a clean surface and place about 2 tablespoons of the filling in the center.
  3. Brush the edges of the wrapper with the beaten egg to help seal.
  4. Fold the wrapper over the filling, then fold in the sides and roll tightly.
  5. Repeat with the remaining wrappers and filling.
  6. Heat oil in a deep fryer or skillet over medium heat. Fry the egg rolls until golden brown.
  7. Remove and drain on paper towels.
  8. Serve hot with your favorite dipping sauce.

Notes

  • For added flavor, consider adding diced jalapeños or green onions to the filling.
  • These egg rolls can also be baked for a healthier option: place them on a baking sheet and spray with cooking oil before baking at 400°F for 15 minutes.
