A delightful and comforting dish that combines tender chicken with fragrant herbs and creamy rice.

Ingredients

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 lemons (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup chopped fresh parsley

Instructions

  1. In a slow cooker, combine olive oil, garlic, thyme, rosemary, salt, pepper, lemon juice and zest.
  2. Add the chicken thighs and coat well with the mixture.
  3. Layer the rice on top of the chicken in the slow cooker.
  4. Pour in the chicken broth over the rice.
  5. Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
  6. Before serving, fluff the rice and garnish with fresh parsley.

Notes

  • For extra flavor, marinate the chicken in the lemon herb mixture overnight.
  • Serve with a side of steamed vegetables.
