- 4 chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 2 lemons (juiced and zested)
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup chopped fresh parsley
- In a slow cooker, combine olive oil, garlic, thyme, rosemary, salt, pepper, lemon juice and zest.
- Add the chicken thighs and coat well with the mixture.
- Layer the rice on top of the chicken in the slow cooker.
- Pour in the chicken broth over the rice.
- Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
- Before serving, fluff the rice and garnish with fresh parsley.
