This Slow Cooker Chicken Tortilla Soup is a delicious and easy way to enjoy a comforting meal.

  • 2 cups cooked, shredded chicken
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh cilantro, chopped
  • tortilla strips for garnish

Instructions

  1. In a slow cooker, combine chicken, corn, black beans, tomatoes, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper.
  2. Stir well and cover.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Before serving, stir in cilantro.
  5. Serve with tortilla strips on top.

Notes

  • Adding avocado can enhance the flavor.
  • For a spicier version, add jalapeños.
