4 large russet potatoes
1 pound ground beef or lamb
1 cup frozen peas and carrots
1 onion, diced
2 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
Instructions
Preheat the oven to 400°F (200°C).
Wash and poke holes in the potatoes, then bake for 45-60 minutes until tender.
In a skillet, brown the ground meat over medium heat, then add onion and garlic, cooking until softened.
Stir in the peas, carrots, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook until heated through.
Once the potatoes are done, slice them open and fluff the insides with a fork.
Fill each potato with the meat mixture and top with shredded cheddar cheese.
Return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
Notes
For a vegetarian version, substitute ground meat with lentils or a plant-based alternative.
