Ingredients

  • 12 ounces penne pasta
  • 2 cups cherry tomatoes, halved
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced
  • 1 medium red onion, diced
  • 3 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cherry tomatoes, zucchini, bell pepper, and red onion.
  3. Drizzle with olive oil, sprinkle with Italian seasoning, salt, and pepper, and toss to coat.
  4. Spread the vegetables on a baking sheet in a single layer and roast for 20-25 minutes.
  5. Meanwhile, cook the penne pasta according to package instructions until al dente.
  6. Drain the pasta and return it to the pot.
  7. Add the roasted vegetables to the pasta and toss to combine.
  8. Serve warm.
