Ingredients

  • 4 ounces turkey bacon
  • 1 cup chopped chicken ham
  • 1 cup cannellini beans
  • 1 cup ditalini pasta
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. Add olive oil to the pot, then sauté onions, carrots, and celery until softened.
  3. Stir in garlic and cook for another minute.
  4. Add chicken ham, cannellini beans, chicken broth, and oregano. Bring to a simmer.
  5. Stir in ditalini pasta and cook until al dente, about 8 minutes.
  6. Season with salt and pepper. Serve topped with parsley and turkey bacon.

Notes

  • For a vegetarian version, substitute turkey bacon with additional beans.
