A healthy and delicious low carb dish featuring cauliflower rice, mushrooms, and spinach.

Ingredients

  • 1 head cauliflower, riced
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Add mushrooms, salt, and black pepper and cook until mushrooms are tender.
  4. Add riced cauliflower and cook, stirring, for about 5-7 minutes.
  5. Stir in spinach and cook until wilted, about 2 minutes.
  6. Serve warm.
