A delicious and nutritious take on comfort food with lentils and rice wrapped in cabbage.

Ingredients

  • 1 cup lentils
  • 1 cup rice
  • 1 head cabbage
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the lentils and rice according to package instructions.
  3. In a skillet, heat olive oil over medium heat and sauté garlic powder, onion powder, paprika, salt, and black pepper.
  4. Combine the cooked lentils and rice with the sautéed mixture.
  5. Remove the core from the cabbage and blanch the leaves in boiling water until soft.
  6. Place a spoonful of the lentil and rice mixture onto each cabbage leaf and roll tightly.
  7. Place the rolls seam-side down in a baking dish and pour vegetable broth over them.
  8. Bake for 30 minutes.

Notes

  • For an extra flavor boost, add herbs like thyme or basil to the filling.
  • Serve with a side of tomato sauce for dipping.
