A delicious and hearty recipe for lentil and rice stuffed cabbage rolls that offers a nutritious twist on a classic comfort dish.

  • 1 medium head of cabbage
  • 1 cup cooked lentils
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 cups tomato sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the cabbage by boiling the head in a large pot of water for about 5 minutes, then remove and let cool.
  3. In a skillet, sauté the onion and garlic until translucent.
  4. In a large bowl, mix the cooked lentils, rice, sautéed onion and garlic, seasonings, and parsley.
  5. Remove the cabbage leaves carefully and spoon the mixture into each leaf, rolling tightly.
  6. Place the rolls seam-side down in a baking dish and cover with tomato sauce.
  7. Bake for 30-40 minutes, until heated through.

Notes

  • For extra flavor, add some cheese to the filling before rolling.
  • Garnish with additional parsley before serving.
