  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 8 cups chicken broth
  • 1 cup wild rice, rinsed
  • 2 cups cooked chicken, shredded
  • 1/4 cup lemon juice
  • 1/4 cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until vegetables are tender.
  2. Add thyme and rosemary, stirring for a minute.
  3. Pour in chicken broth and bring to a boil.
  4. Add wild rice and reduce heat. Simmer until rice is cooked.
  5. Stir in shredded chicken, lemon juice, and heavy cream. Heat through.
  6. Season with salt and black pepper.
