A delightful and warming garlic soup velouté that comforts the soul.

Ingredients

  • 10 cloves garlic
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 potato, peeled and diced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook until fragrant.
  4. Add the diced potato, thyme, salt, and pepper. Cook for a few minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and let simmer until the potatoes are tender.
  7. Use an immersion blender to blend the soup until smooth.
  8. Serve hot, garnished with chopped parsley.
