A comforting roasted garlic soup that is easy to make and perfect for chilly days.

Ingredients

  • 2 heads garlic
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tops off the garlic heads, drizzle with olive oil, and wrap them in foil.
  3. Roast in the oven for about 30-35 minutes until soft.
  4. Once cool, squeeze the garlic into a pot.
  5. Add vegetable broth, salt, and pepper, and bring to a simmer.
  6. Stir in heavy cream and thyme, then blend until smooth.
