An easy and delicious lasagna soup that combines creamy flavors with turkey bacon, perfect for a cozy dinner.

  • 1 pound turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 2 cups uncooked lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 2 cups heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until fragrant.
  3. Add crushed tomatoes, chicken broth, and broken lasagna noodles to the pot.
  4. Stir in Italian seasoning and bring to a boil.
  5. Reduce heat and simmer until noodles are tender.
  6. Stir in heavy cream, mozzarella, and Parmesan cheese until melted.
  7. Add fresh spinach and cooked turkey bacon back into the pot. Season with salt and pepper.
  8. Serve hot and enjoy!

Notes

  • For a healthier version, substitute turkey bacon with lean ground turkey.
  • You can add more vegetables such as bell peppers or zucchini.
