A comforting and creamy lasagna soup featuring turkey bacon and chicken ham.

  • 8 ounces wide lasagna noodles
  • 4 strips turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, and garlic; sauté until onions are translucent.
  3. Add crushed tomatoes, chicken broth, and Italian seasoning; bring to a boil.
  4. Stir in the lasagna noodles and cook until al dente.
  5. Add the chicken ham, heavy cream, and cheeses; stir until melted and combined.
  6. Serve topped with crumbled turkey bacon and fresh basil.

Notes

  • This soup can be made ahead and stored in the fridge for up to 3 days.
  • Add more cheese for a richer flavor.
