- 8 ounces turkey bacon
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (15 ounces) crushed tomatoes
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces lasagna noodles, broken into pieces
- 1 cup heavy cream
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble; set aside.
- In the same pot, add onion and garlic. Sauté until the onion is translucent.
- Add chicken broth, crushed tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
- Stir in broken lasagna noodles and simmer until al dente.
- Reduce heat and stir in heavy cream, ricotta, mozzarella, and Parmesan until smooth. Cook until heated through.
- Serve hot, garnished with crumbled turkey bacon.
