Ingredients

  • 1 pound chicken breast
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 cup sliced mushrooms
  • 1 cup bell peppers, sliced
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 tablespoon lime juice
  • 1 handful cilantro, chopped
  • 1 green onion, sliced

Instructions

  1. Place chicken breast at the bottom of the crockpot.
  2. In a bowl, mix coconut milk, chicken broth, red curry paste, and fish sauce; pour over chicken.
  3. Add mushrooms, bell peppers, garlic, and ginger.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, shred the chicken and stir in lime juice, cilantro, and green onion.

Notes

  • Adjust the spice level by adding more or less curry paste.
  • For a vegetarian version, replace chicken with tofu.
