- 4 slices turkey bacon
- 1 cup chopped onion
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 stalks celery, diced
- 1 zucchini, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 4 cups vegetable broth
- 1 teaspoon Italian seasoning
- 1 cup small pasta
- 2 cups fresh spinach
- Cook turkey bacon in a skillet until crispy. Remove and chop.
- In the same skillet, sauté onion and garlic until soft.
- Add carrots, celery, and zucchini; cook for another 5 minutes.
- Transfer vegetables to the crockpot, add bacon and remaining ingredients.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Add pasta during the last 30 minutes of cooking. Stir in spinach before serving.
