A delicious and hearty crockpot minestrone soup featuring turkey bacon, perfect for a cozy meal.

Ingredients

  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 zucchini, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 1 cup small pasta
  • 2 cups fresh spinach

Instructions

  1. Cook turkey bacon in a skillet until crispy. Remove and chop.
  2. In the same skillet, sauté onion and garlic until soft.
  3. Add carrots, celery, and zucchini; cook for another 5 minutes.
  4. Transfer vegetables to the crockpot, add bacon and remaining ingredients.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. Add pasta during the last 30 minutes of cooking. Stir in spinach before serving.

Notes

  • For added flavor, you can sauté some herbs with the vegetables.
  • Feel free to add any additional vegetables you enjoy.
