- 4 slices turkey bacon
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 2 cloves minced garlic
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) kidney beans, rinsed and drained
- 1 can (15 ounces) cannellini beans, rinsed and drained
- 4 cups vegetable broth
- 2 cups chopped spinach
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a skillet, cook the turkey bacon until crispy. Remove and chop.
- In the same skillet, sauté carrots, celery, onion, and garlic until softened.
- Transfer the bacon and veggies to the crockpot.
- Add diced tomatoes, beans, broth, spinach, and seasonings to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Serve hot and enjoy!
