A hearty and comforting soup made with turkey bacon and a variety of vegetables.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 4 cups vegetable broth
  • 2 cups chopped spinach
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and chop.
  2. In the same skillet, sauté carrots, celery, onion, and garlic until softened.
  3. Transfer the bacon and veggies to the crockpot.
  4. Add diced tomatoes, beans, broth, spinach, and seasonings to the crockpot.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve hot and enjoy!

Notes

  • Feel free to add any other vegetables you enjoy.
  • Great for meal prep and can be frozen.
