  • 8 ounces rotini pasta
  • 2 cups fresh corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, fresh corn, cherry tomatoes, and red onion.
  3. In a separate bowl, mix together the mayonnaise, sour cream, lime juice, cilantro, chili powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine until well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
