  • 1 pound chicken breasts
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1 cup tortilla chips, crushed

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add diced onion and minced garlic. Cook until softened.
  3. Add chicken breasts, diced tomatoes, black beans, chicken broth, corn, cumin, and chili powder. Bring to a boil.
  4. Reduce heat and simmer until chicken is cooked through. Remove chicken, shred it, and return to the pot.
  5. Stir in heavy cream and shredded cheese until melted and combined.
  6. Serve with diced avocado, crushed tortilla chips, and crumbled turkey bacon on top.

Notes

  • For a spicier version, add jalapeños or hot sauce.
  • This soup is even better the next day as the flavors meld.
