  • 4 slices turkey bacon, chopped

  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 8 ounces egg noodles
  • 2 cups baby spinach
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped turkey bacon and cook until crispy.
  3. Stir in the onion, carrots, and celery. Cook until softened.
  4. Add minced garlic and cook for an additional minute.
  5. Pour in the chicken broth, then add the shredded chicken and thyme.
  6. Bring the soup to a boil, then add the egg noodles.
  7. Cook according to noodle package instructions, or until tender.
  8. Stir in the spinach and season with salt and pepper.
