  • 2 pounds baby potatoes
  • 1 pound smoked sausage
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons chopped chives

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half and place them in a large mixing bowl.
  3. Add the smoked sausage, ranch seasoning, olive oil, garlic powder, black pepper, and salt to the potatoes and mix well.
  4. Spread the mixture onto a baking sheet and bake for 30-35 minutes or until the potatoes are tender.
  5. Remove from the oven and sprinkle the shredded cheddar cheese on top. Return to the oven for an additional 5 minutes until the cheese is melted.
  6. Garnish with chopped chives before serving.
