  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 can (14 oz) coconut milk
  • 1 bell pepper, sliced
  • 1 cup spinach
  • salt to taste

Instructions

  1. Heat coconut oil in a pan over medium heat.
  2. Add diced onion, garlic, and ginger; sauté until fragrant.
  3. Stir in curry powder and cook for another minute.
  4. Pour in coconut milk and add bell pepper; simmer for 5 minutes.
  5. Add the salmon fillets and cover; cook for 10-12 minutes until salmon is flaky.
