  • 1 pound chicken thighs, boneless and skinless
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons vegetable oil
  • 1 lime, juiced

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and bell pepper; sauté until softened.
  3. Season the chicken thighs with salt, black pepper, thyme, and allspice.
  4. Add the chicken to the pot and brown on all sides.
  5. Stir in the rice, coconut milk, chicken broth, and lime juice.
  6. Bring to a boil, reduce the heat to low, cover, and simmer for 20-25 minutes.
