  • 4 pieces chicken thighs
  • 2 cups rice
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup green onions, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chicken thighs and sear until golden brown on both sides.
  3. Remove chicken and set aside. In the same skillet, add onion, garlic, and bell pepper, sautéing until softened.
  4. Stir in rice, thyme, paprika, salt, and pepper, cooking for 2 minutes.
  5. Pour in coconut milk and chicken broth, bringing to a boil.
  6. Return chicken to the skillet, cover, and reduce heat. Simmer for 20-25 minutes until rice is cooked.
  7. Garnish with green onions before serving.
