- 4 pieces chicken thighs
- 2 cups rice
- 1 can coconut milk
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 teaspoon thyme
- 1 teaspoon paprika
- 2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup green onions, chopped
- In a large skillet, heat olive oil over medium heat.
- Add chicken thighs and sear until golden brown on both sides.
- Remove chicken and set aside. In the same skillet, add onion, garlic, and bell pepper, sautéing until softened.
- Stir in rice, thyme, paprika, salt, and pepper, cooking for 2 minutes.
- Pour in coconut milk and chicken broth, bringing to a boil.
- Return chicken to the skillet, cover, and reduce heat. Simmer for 20-25 minutes until rice is cooked.
- Garnish with green onions before serving.
