  • 1 pound chicken thighs
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 lime, juiced

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and bell pepper, sauté until soft.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add chicken thighs and brown on all sides.
  5. Stir in rice, coconut milk, chicken broth, curry powder, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Simmer for 20 minutes or until rice is cooked and chicken is tender.
  8. Finish with lime juice and serve.
