  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 can green chilies
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn kernels
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until soft.
  2. Add the chicken breasts and Cajun seasoning, cooking until the chicken is browned.
  3. Stir in the green chilies, white beans, chicken broth, corn, salt, and pepper. Bring to a boil.
  4. Reduce heat and let it simmer for 20 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Stir in the heavy cream and cook for an additional 5 minutes.
  7. Serve hot, garnished as desired.

Notes

  • Adjust the spice level by modifying the Cajun seasoning.
  • Top with avocado or cilantro for extra flavor.
