- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 can green chilies
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup corn kernels
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup heavy cream
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until soft.
- Add the chicken breasts and Cajun seasoning, cooking until the chicken is browned.
- Stir in the green chilies, white beans, chicken broth, corn, salt, and pepper. Bring to a boil.
