  • 4 slices turkey bacon
  • 1/4 cup shredded cheddar cheese
  • 4 flour tortillas
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat and cook turkey bacon until crispy.
  2. Remove bacon and add onions and bell peppers to the skillet, sautéing until soft.
  3. In a bowl, whisk eggs with salt and pepper, then pour into the skillet. Stir until eggs are cooked through.
  4. Chop cooked bacon and add it to the eggs, sprinkle with cheese, stirring until melted.
  5. Warm tortillas briefly in another skillet. Spoon filling onto each tortilla, wrap tightly, and serve warm.
