  • 2 tablespoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon ginger minced
  • 1 bell pepper chopped
  • 2 cups coconut milk
  • 1 cup chicken broth
  • 2 tablespoons fresh thyme
  • 2 scallions chopped
  • 2 hot peppers (optional) whole

Instructions

  1. In a bowl, combine chicken pieces with curry powder, salt, and black pepper. Let it marinate for at least one hour.
  2. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
  3. Add the marinated chicken and brown on all sides.
  4. Stir in the bell pepper, coconut milk, and chicken broth. Bring to a boil.
  5. Reduce heat to low, add thyme, scallions, and hot peppers, if using. Cover and simmer for 30-40 minutes until chicken is cooked through.
  6. Adjust seasoning if necessary and serve hot with rice.
