  • 1 cup peanut butter
  • 4 slices turkey bacon
  • 1 large onion, chopped
  • 2 carrots, diced
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1 sweet potato, cubed
  • 1 tablespoon ginger, grated
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  2. Add onions, carrots, and bell pepper to the pot and sauté until soft.
  3. Stir in garlic and ginger, cooking for 1 minute more.
  4. Add vegetable broth, tomatoes, sweet potato, and peanut butter. Mix well.
  5. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  6. Stir in spinach and cook until wilted.
  7. Top with chopped turkey bacon and serve hot.
