- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, diced
- 1 can (14 oz) diced tomatoes
- 1 teaspoon ground ginger
- 2 teaspoons ground cumin
- 1 teaspoon cayenne pepper
- 1 cup vegetable broth
- 1 cup peanut butter
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups spinach
- Salt to taste
- Fresh cilantro for garnish
- In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
- Stir in garlic, bell pepper, and carrots; cook for a few minutes.
- Add diced tomatoes, ginger, cumin, and cayenne pepper. Cook for another 5 minutes.
- Pour in vegetable broth and bring to a simmer.
- Stir in peanut butter until fully combined.
- Add chickpeas and spinach; cook for about 5 more minutes.
- Season with salt to taste and serve hot, garnished with fresh cilantro.
