  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, diced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground ginger
  • 2 teaspoons ground cumin
  • 1 teaspoon cayenne pepper
  • 1 cup vegetable broth
  • 1 cup peanut butter
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups spinach
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
  2. Stir in garlic, bell pepper, and carrots; cook for a few minutes.
  3. Add diced tomatoes, ginger, cumin, and cayenne pepper. Cook for another 5 minutes.
  4. Pour in vegetable broth and bring to a simmer.
  5. Stir in peanut butter until fully combined.
  6. Add chickpeas and spinach; cook for about 5 more minutes.
  7. Season with salt to taste and serve hot, garnished with fresh cilantro.
