Ingredients

  • 1 cup unsweetened peanut butter
  • 4 cups vegetable broth
  • 2 cups sweet potatoes peeled and cubed
  • 1 can chickpeas drained and rinsed
  • 1 tablespoon soy sauce
  • 1 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, and ginger; sauté until fragrant.
  3. Stir in tomatoes, peanut butter, and vegetable broth.
  4. Add sweet potatoes and chickpeas; stir to combine.
  5. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  6. Stir in soy sauce, cayenne pepper, salt, and pepper.
