A delicious and comforting African Peanut Stew that warms the soul and delights the taste buds.

Ingredients

  • 1 cup peanut butter
  • 2 cups vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can diced tomatoes
  • 2 cups sweet potatoes, cubed
  • 1 can chickpeas, drained and rinsed
  • 2 cups spinach
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, garlic, and ginger and sauté until the onion is translucent.
  3. Stir in the cumin and coriander and cook for another minute.
  4. Add the sweet potatoes and the vegetable broth, then bring to a boil.
  5. Reduce the heat to a simmer and cook until the sweet potatoes are tender.
  6. Stir in the peanut butter and diced tomatoes, mixing well.
  7. Add the chickpeas and spinach, cooking until the spinach is wilted.
  8. Season with salt to taste and serve warm.

Notes

  • This stew can be thickened by adding more peanut butter if desired.
  • Feel free to add other vegetables like carrots or broccoli.
