- 1 cup peanut butter
- 2 cups vegetable broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can diced tomatoes
- 2 cups sweet potatoes, cubed
- 1 can chickpeas, drained and rinsed
- 2 cups spinach
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- salt to taste
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, garlic, and ginger and sauté until the onion is translucent.
- Stir in the cumin and coriander and cook for another minute.
- Add the sweet potatoes and the vegetable broth, then bring to a boil.
- Reduce the heat to a simmer and cook until the sweet potatoes are tender.
- Stir in the peanut butter and diced tomatoes, mixing well.
- Add the chickpeas and spinach, cooking until the spinach is wilted.
- Season with salt to taste and serve warm.
