  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1 cup creamy peanut butter
  • 2 cups sweet potatoes, diced
  • 1 cup spinach, chopped
  • Salt to taste
  • 1 tablespoon lime juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and sauté until translucent.
  3. Stir in garlic, ginger, and spices and cook for another minute.
  4. Add diced tomatoes, chickpeas, sweet potatoes, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  6. Mix in peanut butter and spinach. Cook until spinach wilts.
  7. Season with salt and lime juice before serving.
