- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup vegetable broth
- 1 cup creamy peanut butter
- 2 cups sweet potatoes, diced
- 1 cup spinach, chopped
- Salt to taste
- 1 tablespoon lime juice
- Heat olive oil in a large pot over medium heat.
- Add onions and sauté until translucent.
- Stir in garlic, ginger, and spices and cook for another minute.
- Add diced tomatoes, chickpeas, sweet potatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
- Mix in peanut butter and spinach. Cook until spinach wilts.
