Ingredients

  • 1 cup roasted peanuts
  • 2 cups vegetable broth
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 sweet potato, diced
  • 2 cups spinach
  • 1 tsp ground ginger
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. In a large pot, sauté the onions and garlic until translucent.
  2. Add the sweet potato and cook for a few minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and stir in the coconut milk and crushed peanuts.
  5. Season with ginger, chili powder, and salt.
  6. Simmer for about 20 minutes until the sweet potato is tender.
  7. Just before serving, stir in the spinach and cook until wilted.
