A quick and delicious chicken soup infused with all the flavors of nachos.

Ingredients

  • 1 pound chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 2 cups chicken broth
  • 1 can diced tomatoes, undrained
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 2 tablespoons taco seasoning
  • 1 cup tortilla chips, crushed
  • 1 cup shredded cheese
  • 1/2 cup sour cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until golden.
  2. Stir in chopped onion and cook until softened.
  3. Add chicken broth, tomatoes, corn, black beans, and taco seasoning. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Serve topped with crushed tortilla chips, shredded cheese, and a dollop of sour cream.

Notes

  • For extra flavor, garnish with fresh cilantro or avocado.
