- 1 pound chicken breasts, diced
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 2 cups chicken broth
- 1 can diced tomatoes, undrained
- 1 can corn, drained
- 1 can black beans, rinsed and drained
- 2 tablespoons taco seasoning
- 1 cup tortilla chips, crushed
- 1 cup shredded cheese
- 1/2 cup sour cream
- In a large pot, heat olive oil over medium heat. Add diced chicken and cook until golden.
